Double chocolate rum cookies

These fared well as a Green Design Reading Group snack and received rave reviews from some other individuals.

  • 1 cup brown sugar
  • 1/3 stick butter, melted
  • 1/4 cup rum
  • 1/4 cup molasses
  • 1 egg
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 6 oz semi-sweet chocolate chips
  • 1/4 cup sliced almonds
  • Preheat oven to 350F. Cream butter and sugar, then mix in other wet ingredients. Mix dry ingredients separately, then add to wet. Adjust moisture with rum or flour to a sticky dough consistency. Mix chocolate chips and almonds in last. Arrange on a cookie sheet and bake until cookies have risen but are still bubbly and fall easily to the touch (the underbaking makes them chewy and moist in the center and lets them retain more rum).
